
Oven 180ºC/350ºF/GasMark4
Mix the sugar and butter. Beat the eggs and add vanilla extract. Add to sugar mixture & beat. Mash the banana & add. Fold in the flour. Place in paper cases & bake for 20 minutes.
Icing
Beat cream cheese and butter. Beat in dulche de leche & icing sugar.
Slice the tops off the cakes and cut in half to make butterfly wings. Pipe icing, place wings on top and dust with icing sugar.
(Regular butter icing or jam can be used in place of caramel icing)
Banana Butterfly Cakes
1 Banana
4oz Butter
4oz Sugar
2 Eggs
3/4 tsp Vanilla Extract
4oz Self-Raising Flour
Caramel Icing
4oz Cream Cheese
1/2 oz Butter
3oz Dulche de Leche*
1.5 oz Icing Sugar
*Dulche de Leche is caramel
flavouring available at larger
supermarkets.
Christmas Shortbread
Flour - 9 oz
Butter - 8 oz
Sugar - 4 oz
Salt - 1/4 teaspoon
Vanilla extract - 1/2 teaspoon
Smarties and sprinkles to decorate
MIX the butter and sugar
ADD the flour, salt and vanilla extract
ROLL OUT and cut into Christmas shapes (Trees, hearts, stars)
DECORATE with smarties and sprinkles
COOK at 180º C for 15 min
